Ingredients
- Ripened plantain
- Ground cinnamon
- Buffalo cheese
- Sesame oil
- Plantain flour (optional)
Preparation
- Cut the plantain with the skin into 3 parts and boil until soft enough to mash, about 20 minutes.
- Once done, remove the skin, mash it in a bowl, and season with cinnamon.
- If it sticks to your hands when shaping the croquettes, thicken it with plantain flour.
- Form small balls with the mixture, make a hole in the center, stuff with buffalo cheese, close it, and shape the croquettes into oval, flattened forms.
- Heat oil in a pan and fry the croquettes, browning both sides.
- If you want them extra crispy, after frying, place them in the oven on the "broil" setting for a few minutes and they're ready!
