Ingredients
- 1 cup almond flour
- 1 cup ground flaxseed
- ½ tsp salt
- 1 tbsp olive oil
- 6–8 tbsp water
Preparation
- Preheat the oven to 150 °C (300 °F).
- Mix the flaxseed with 2 tablespoons of water and let it sit for 15 minutes until it thickens.
- While the flaxseed mixture rests, combine the remaining flaxseed, almond flour, and salt using a hand mixer.
- Add the olive oil to the soaked flaxseed mixture and stir.
- Gradually add the remaining tablespoons of water and mix well.
- Add 1 to 2 tablespoons of the dry mixture at a time into the wet mixture, stirring thoroughly.
- If the dough is too dry, add more water.
- The key is to get a dough that doesn’t stick and can be formed into a ball.
- Roll the dough out to about 3 mm thick.
- Use a cookie cutter to shape the cookies, place them on a baking tray, and bake until golden and crispy.
