Banana Bars Recipe

Prepare a delicious and healthy quinoa and banana bread, sweetened with stevia and featuring a touch of cinnamon and cocoa—perfect to enjoy at any time of the day.

Ingredients

     
  • 1 ½ tablespoons cocoa powder
  • 1/2 cup quinoa (previously soaked for 24 hours and rinsed)
  • 1/2 cup quinoa flour
  • 2 tablespoons flaxseed
  • 2 packets stevia
  • 1 teaspoon cinnamon
  • 2 eggs
  • 2 bananas (or ripe plantains)

Preparation

  • Preheat the oven to 180°C (350°F).
  • Mix the quinoa, quinoa flour, cinnamon, flaxseed, cocoa powder, and stevia together.
  • Add the beaten eggs and the mashed bananas (or plantains).
  • Mix well until fully combined.
  • Pour the mixture into a baking dish and bake for 15–20 minutes, and it's ready!

Note:
For an extra touch, you can add 1 teaspoon of honey and some crushed nuts.
