Ingredients
- 4 bell peppers
- 4 garlic cloves
- 1/2 onion
- Coconut oil
- Olive oil
- 2 teaspoons paprika
- Salt
- Pepper
- Oregano
- Chopped parsley
Preparation
- Cut the bell peppers into quarters, remove the seeds, and wash them thoroughly.
- Place them on a baking tray with a little water at the bottom. Add salt, a drizzle of olive oil, and chopped garlic.
- Roast at 400°F (200°C) until the peppers become soft and the skin peels off easily.
- Peel the roasted bell peppers.
- Meanwhile, sauté the chopped onion in coconut oil until golden.
- Add the peeled bell peppers, paprika, pepper, oregano, a pinch of salt, and 1 ½ cups of water.
- Cook for a few minutes, then blend the mixture until smooth.
- Serve garnished with chopped parsley.
