Brownie Cheesecake Recipe

Ingredients

     

Ingredients:

  • 4 egg whites
  • 2 egg yolks
  • 2 cups almond flour
  • 3 tablespoons cocoa powder
  • 2 teaspoons grain-free baking powder/baking soda
  • Vanilla extract
  • Cinnamon
  • 4 tablespoons hazelnut butter or coconut oil
  • Stevia to taste

For the topping:

  • 2 cups coconut or almond milk
  • 3 cups buffalo or coconut Greek yogurt
  • 2 tablespoons unflavored gelatin
  • 15 strawberries
  • 2 tablespoons honey
  • Juice of half a lemon

Preparation

  • Blend everything together in the blender, starting with the liquid ingredients and then adding the dry ones.
  • Pour the mixture into a greased silicone mold and bake for 15 minutes, or until a toothpick comes out clean.

For the topping:

  • In a saucepan, mix the yogurt and one cup of milk, and heat gently to combine without bringing it to a boil.
  • Dissolve the gelatin in the other cup of milk and add it to the mixture.
  • Chop the strawberries and add them to the mixture.
  • Refrigerate until it sets, about 2 hours.
