- 2 teaspoons grain-free baking powder/baking soda
- Vanilla extract
- Cinnamon
- 4 tablespoons hazelnut butter or coconut oil
- Stevia to taste
For the topping:
- 2 cups coconut or almond milk
- 3 cups buffalo or coconut Greek yogurt
- 2 tablespoons unflavored gelatin
- 15 strawberries
- 2 tablespoons honey
- Juice of half a lemon
Preparation
- Blend everything together in the blender, starting with the liquid ingredients and then adding the dry ones.
- Pour the mixture into a greased silicone mold and bake for 15 minutes, or until a toothpick comes out clean.
For the topping:
- In a saucepan, mix the yogurt and one cup of milk, and heat gently to combine without bringing it to a boil.
- Dissolve the gelatin in the other cup of milk and add it to the mixture.
- Chop the strawberries and add them to the mixture.
- Refrigerate until it sets, about 2 hours.
