Ingredients
- 1 large grated carrot
- ½ banana
- 1 vegan egg (1 tbsp ground flaxseed + 2 tbsp water, let sit for 10 minutes)
- ⅓ cup water or plant-based milk
- ¼ cup almond or hazelnut flour
- ¼ cup cassava flour
- ¼ tsp baking soda
- A pinch of pink salt and cinnamon
Preparation
- Blend everything until well combined. The batter should have a smooth, lump-free consistency.
- Cook in a hot skillet greased with coconut oil, flipping to brown both sides.
- You can serve with vegan cream cheese or coconut cream for an amazing touch.
