Cassava Atol (Yuca Porridge) Recipe

Delicious warm drink made with cassava, coconut milk, cinnamon, honey, and vanilla.

Ingredients

     
  • 250 g coconut milk
  • 250 g grated cassava
  • 1 liter water
  • Cinnamon sticks
  • 80 ml honey
  • Vanilla to taste

Preparation

     
  • Bring the water, cinnamon sticks, and honey to medium heat.
  • Blend the coconut milk and add the cinnamon-infused water.
  • Separately, blend the grated cassava and strain it through a cloth.
  • Add the strained cassava to the previous mixture and stir in the vanilla.
  • Stir constantly until it reaches a boil — and it’s ready.

Note: We recommend pairing this with your preferred protein (chicken, turkey, fish, etc.) for breakfast if you're not vegetarian.
