Ingredients
- 1 kg of shredded cauliflower (food processor)
- 400 g of buffalo ricotta cheese
- 2 eggs
- Salt
- Pepper
- Oregano
- 10 cherry tomatoes
- 1 onion
- 4 garlic cloves
Preparation
- In a bowl, mix the cauliflower with the eggs and ricotta.
- Spread the mixture onto a silicone mold or a greased pizza tray lined with parchment paper, and bake at 200 °C (390 °F) until golden brown.
- Remove from the oven and add your desired toppings.
- To prepare the sauce, sauté 1 tablespoon of chopped onion, garlic, and sliced cherry tomatoes.
- Add 2 tablespoons of water and season with salt, pepper, and oregano to taste.
- Simmer for 15 minutes.
- Spread the sauce over the pizza base and add your toppings.
- Return to the oven to gratin and it’s ready.
