Cauliflower Risotto with Asparagus and Mushrooms Recipe

Ingredients

     
  • 3 garlic cloves
  • 2 garlic sprout stems
  • 1 scallion (white part only)
  • 1 leek (white part only)
  • 6 sweet peppers
  • ½ red onion
  • ½ white onion
  • 1 bunch of asparagus
  • 150 g of sliced mushrooms
  • 1 grated cauliflower
  • 3 tbsp coconut milk
  • Coconut oil for sautéing
  • Oregano to taste
  • Salt to taste
  • Turmeric to taste
  • White pepper to taste

Preparation

  • Chop all the vegetables into small pieces
  • Heat the coconut oil, add the garlic, turmeric, and white pepper, and cook for one minute
  • Add the garlic sprouts, scallion, leek, sweet peppers, red onion, and white onion, and sauté for a couple of minutes
  • Add the asparagus and then the mushrooms, stir and cover, letting it cook until juicy
  • Uncover and add the grated cauliflower, coconut milk, oregano, and salt, stir, cover again, and let it cook for 1 more minute
  • Serve and enjoy
