Delicious celery and clove fritters mixed with honey — perfect to pair with your breakfast and a protein of your choice.


Ingredients
- 8 pieces of celery/turnip/arracacha, cut into medium chunks
- Cassava flour for thickening
- 2 egg yolks
- 2 cups of honey (optional)
- 2 cups of water
- 2 cloves
- Salt to taste
- Coconut oil
Preparation
- Mix the cloves with the honey.
- Boil the celery (or turnip/arracacha) for about 12 to 15 minutes.
- Drain and mash into a purée.
- In a bowl, combine the purée, egg yolks, and 1 to 2 cups of cassava flour.
- The mixture should be soft, moldable, and not sticky to the touch.
- In a deep pot, heat enough oil to fully cover the fritters.
- Using two spoons, shape the dough and fry until golden on both sides.
- Place on a strainer to drain excess oil.
- You can serve them with the honey-clove syrup, on their own, or however you prefer.
- Note: We recommend accompanying your breakfast with a protein of your choice (chicken, turkey, fish, etc.) if you're not vegetarian.
