Celery/Turnip/Arracacha Fritters Recipe

Delicious celery and clove fritters mixed with honey — perfect to pair with your breakfast and a protein of your choice.

Ingredients

     
  • 8 pieces of celery/turnip/arracacha, cut into medium chunks
  • Cassava flour for thickening
  • 2 egg yolks
  • 2 cups of honey (optional)
  • 2 cups of water
  • 2 cloves
  • Salt to taste
  • Coconut oil

Preparation

     
  • Mix the cloves with the honey.
  • Boil the celery (or turnip/arracacha) for about 12 to 15 minutes.
  • Drain and mash into a purée.
  • In a bowl, combine the purée, egg yolks, and 1 to 2 cups of cassava flour.
  • The mixture should be soft, moldable, and not sticky to the touch.
  • In a deep pot, heat enough oil to fully cover the fritters.
  • Using two spoons, shape the dough and fry until golden on both sides.
  • Place on a strainer to drain excess oil.
  • You can serve them with the honey-clove syrup, on their own, or however you prefer.
  • Note: We recommend accompanying your breakfast with a protein of your choice (chicken, turkey, fish, etc.) if you're not vegetarian.
