Delicious coconut balls coated in chocolate, perfect to enjoy at any time of the day.


Ingredients
- 1 and 3/4 cups (140 g) of unsweetened shredded coconut
- 3 teaspoons (15 g) of mild coconut oil
- 3 tablespoons (55 g) of honey or liquid stevia to taste
- 2 tablespoons (30 g) of unsweetened coconut milk
- 1/2 teaspoon (5 g) of vanilla extract
- 1/8 teaspoon of salt
- 100 grams of pure dark chocolate (gluten-free and dairy-free)
- A little extra shredded coconut for sprinkling
Preparation
- In a bowl, combine half of the shredded coconut with all the coconut oil, honey, coconut milk, vanilla extract, and salt, and mix on high speed.
- Add the remaining coconut and mix again.
- Form balls with the mixture, pressing them tightly, and place them on a baking sheet lined with parchment paper.
- Chill in the fridge for 2-3 hours.
- Melt the chocolate in a bowl slowly, stirring constantly.
- Dip each ball into the chocolate and place them back on the baking sheet, sprinkling a little extra shredded coconut on top.
- Chill in the fridge for about 5-10 minutes.
- Serve and enjoy!
