Prepare delicious coconut balls coated in chocolate, perfect to enjoy as a dessert or sweet treat.


Ingredients
- 1¾ cups (140g) shredded coconut
- 3 teaspoons olive oil
- 3 tablespoons honey (or liquid stevia for a ketogenic option)
- 2 tablespoons coconut milk
- 1/2 teaspoon vanilla extract
- 1/8 teaspoon salt
- Pure dark chocolate
Preparation
- In a bowl, add half of the shredded coconut along with all the olive oil, honey or stevia, coconut milk, vanilla extract, and salt.
- Beat at high speed until all ingredients are well combined.
- Add the remaining shredded coconut and mix again until fully integrated.
- Form small balls by pressing the mixture firmly and place them on a tray. Refrigerate for 2 hours.
- Melt the dark chocolate in a double boiler, adding a touch of margarine.
- Once melted, dip the coconut balls into the chocolate and sprinkle with shredded coconut.
- Return the coated balls to the refrigerator for 1 more hour—and they’re ready to enjoy!
