Coconut and Chocolate Truffles Recipe

Ingredients

     
  • 1¾ cups (140g) shredded coconut
  • 3 teaspoons olive oil
  • 3 tablespoons honey (or liquid stevia for a ketogenic option)
  • 2 tablespoons coconut milk
  • 1/2 teaspoon vanilla extract
  • 1/8 teaspoon salt
  • Pure dark chocolate

Preparation

  • In a bowl, add half of the shredded coconut along with all the olive oil, honey or stevia, coconut milk, vanilla extract, and salt.
  • Beat at high speed until all ingredients are well combined.
  • Add the remaining shredded coconut and mix again until fully integrated.
  • Form small balls by pressing the mixture firmly and place them on a tray. Refrigerate for 2 hours.
  • Melt the dark chocolate in a double boiler, adding a touch of margarine.
  • Once melted, dip the coconut balls into the chocolate and sprinkle with shredded coconut.
  • Return the coated balls to the refrigerator for 1 more hour—and they’re ready to enjoy!
