Ingredients
- 3 eggplants
- 10 g spinach
- 1 small onion
- 3 garlic cloves
- Pepper
- 4 tablespoons ground cassava bread (plus more for coating)
- 1 sprig of parsley
- 1 egg
- Salt to taste
Preparation
- Preheat the oven to 180°C (356°F).
- Peel and dice the eggplants into small cubes.
- Finely chop the onion and sauté over medium heat.
- Add pepper and garlic.
- Stir in the eggplant and spinach.
- Add salt to taste and sauté for 10 minutes, stirring occasionally.
- Beat the egg with the parsley.
- Add the vegetables and ground cassava bread to create a firm mixture.
- Form meatballs with your hands.
- Coat with ground cassava bread, place on a baking tray, and bake for 10 minutes.
