A delicious bread made with plantain and chia seeds, with a moist and flavorful texture.


Ingredients
- 1 green or semi-ripe plantain
- 4 tbsp hydrated chia gel (55 g chia seeds with 300 ml water, whisk and let sit for 20 minutes — 2 tbsp replace 1 egg)
- Vegetable oil
Preparation
- Blend the plantain and the hydrated chia gel until smooth.
- Grease a baking pan with vegetable oil and pour in the mixture.
- Bake at 150 °C (300 °F) for 20 minutes.
Note: The bread doesn’t rise and remains slightly moist inside.
