Ingredients

     
  • 10 green plantains
  • 1 semi-ripe (pintón) plantain
  • Vinegar
  • Salt to taste
  • Lemon to taste
  • Olive oil to taste
  • Annatto (onoto) to taste

Preparation

  • Soak the plantains for 30 minutes in water with vinegar, salt, and lemon.
  • Boil the plantains until tender, then mash them with a fork.
  • Add annatto-infused oil and salt to taste, and knead the dough.
  • To assemble the hallaca, moisten your hands, flatten the dough over a banana leaf, fill it with your desired stew, and fold to close.
