Ingredients
- 10 medium potatoes
- ½ cup cooked quinoa
- 1 garlic clove
- ¼ onion
- Cilantro
- 1 sweet pepper
- Garlic to taste
- Pepper, cumin, thyme, oregano, paprika, and salt
- Ground cassava flatbread (casabe)
- Pecorino cheese (optional)
Preparation
- Peel and cook the potatoes, then mash them into a purée.
- Finely chop the garlic, onion, cilantro, and sweet pepper, and sauté them.
- Mix the purée with all the ingredients, adding a bit of the oil used for the sauté to bring everything together until you get a texture similar to ground meat.
- Form small balls and coat them in ground cassava flatbread (casabe).
