Enjoy a delicious homemade pumpkin flan, smooth and creamy, with a hint of caramel.


Ingredients
- 1 kg pumpkin (or butternut squash)
- 1 cup water
- 3 eggs
- Organic stevia to taste
- 3 teaspoons cinnamon
- 1 cup almond or coconut milk
- A pinch of salt
Preparation
- Preheat the oven to 180°C (350°F).
- Prepare the caramel in a saucepan.
- Boil water, and meanwhile, peel the pumpkin and cut it into 3 cm squares.
- Boil the pumpkin for 15 minutes.
- Remove from the heat, drain, and let it cool slightly.
- In a bowl, beat the eggs until frothy, then add the sugar, salt, cinnamon, and milk. Mix everything well.
- Mash the pumpkin with a fork until it forms a puree, then add it to the mixture.
- Pour the mixture into a mold and bake for 30 minutes.
- Let it cool and unmold.
