Pumpkin and Cinnamon Flan Recipe

Ingredients

     
  • 1 kg pumpkin (or butternut squash)
  • 1 cup water
  • 3 eggs
  • Organic stevia to taste
  • 3 teaspoons cinnamon
  • 1 cup almond or coconut milk
  • A pinch of salt

Preparation

     
  • Preheat the oven to 180°C (350°F).
  • Prepare the caramel in a saucepan.
  • Boil water, and meanwhile, peel the pumpkin and cut it into 3 cm squares.
  • Boil the pumpkin for 15 minutes.
  • Remove from the heat, drain, and let it cool slightly.
  • In a bowl, beat the eggs until frothy, then add the sugar, salt, cinnamon, and milk. Mix everything well.
  • Mash the pumpkin with a fork until it forms a puree, then add it to the mixture.
  • Pour the mixture into a mold and bake for 30 minutes.
  • Let it cool and unmold.
