Ingredients
- 1 head of cauliflower
- 1 carrot, finely diced
- 1 celery stalk, finely chopped
- 1 bell pepper, finely diced
- 1 tbsp coconut oil for sautéing
- 1½ cups chicken broth
- Turmeric to taste
- Spices to taste
Preparation
- Process the cauliflower into rice-like pieces.
- Sauté all the vegetables except the cauliflower.
- Add the cauliflower and let it cook.
- Add the broth, turmeric, and spices to taste.
- Let it cook until tender.
