Quick Cauliflower Rice Recipe

A healthy, low-carb substitute for traditional rice. Process the cauliflower into rice-sized pieces, then sauté carrot, celery, and bell pepper in coconut oil.

Ingredients

     
  • 1 head of cauliflower
  • 1 carrot, finely diced
  • 1 celery stalk, finely chopped
  • 1 bell pepper, finely diced
  • 1 tbsp coconut oil for sautéing
  • 1½ cups chicken broth
  • Turmeric to taste
  • Spices to taste

Preparation

     
  • Process the cauliflower into rice-like pieces.
  • Sauté all the vegetables except the cauliflower.
  • Add the cauliflower and let it cook.
  • Add the broth, turmeric, and spices to taste.
  • Let it cook until tender.
  • Enjoy!
