Ripe Plantain Pudding Recipe

Ingredients

     
  • 2 cups ripe plantain
  • 1 2/3 cups honey
  • 6 eggs
  • 1 tablespoon lemon juice
  • 1/4 cup clarified butter or ghee
  • 1/4 cup coconut milk
  • 1/4 tablespoon ground cinnamon
  • 1/4 cup raisins

Preparation

     
  • Boil the plantains, drain them, mash them, and measure out two cups.
  • Beat the eggs with the honey, melted ghee, and lemon juice.
  • Add the mashed plantains, cinnamon, raisins, and coconut milk.
  • Mix well until fully combined.
  • Grease a baking pan and pour in the mixture.
  • Bake at 180°C (350°F) for 40 minutes.
