Ingredients
- 2 cups ripe plantain
- 1 2/3 cups honey
- 6 eggs
- 1 tablespoon lemon juice
- 1/4 cup clarified butter or ghee
- 1/4 cup coconut milk
- 1/4 tablespoon ground cinnamon
- 1/4 cup raisins
Preparation
- Boil the plantains, drain them, mash them, and measure out two cups.
- Beat the eggs with the honey, melted ghee, and lemon juice.
- Add the mashed plantains, cinnamon, raisins, and coconut milk.
- Mix well until fully combined.
- Grease a baking pan and pour in the mixture.
- Bake at 180°C (350°F) for 40 minutes.
