Ingredients
- 2 boiled sweet potatoes
- ½ cup almond flour
- 1 cup coconut flour
- 1 cup coconut milk
- 2 dates, previously soaked in water
- 1 egg
- 1 ½ tsp grain-free baking powder or baking soda
- Cinnamon to taste
- Vanilla to taste
- Stevia to taste, if desired
- Coconut oil
Preparation
- In separate bowls, mix all the liquid ingredients and the dry ingredients.
- Combine everything until you get a thick, smooth batter.
- In a non-stick skillet greased with coconut oil, pour a small amount—about 1 tablespoon—shape it, and cook on both sides.
