Sweet Potato and Coconut Pancakes Recipe

Ingredients

     
  • 2 boiled sweet potatoes
  • ½ cup almond flour
  • 1 cup coconut flour
  • 1 cup coconut milk
  • 2 dates, previously soaked in water
  • 1 egg
  • 1 ½ tsp grain-free baking powder or baking soda
  • Cinnamon to taste
  • Vanilla to taste
  • Stevia to taste, if desired
  • Coconut oil

Preparation

  • In separate bowls, mix all the liquid ingredients and the dry ingredients.
  • Combine everything until you get a thick, smooth batter.
  • In a non-stick skillet greased with coconut oil, pour a small amount—about 1 tablespoon—shape it, and cook on both sides.
  • Note: We recommend serving this breakfast with your preferred protein (chicken, turkey, fish, etc.) if you are not vegetarian.
