Vegetable Pie Recipe

Ingredients

     
  • Potato
  • Zucchini
  • 200g spinach
  • 2 tomatoes
  • 2 carrots
  • 1 onion
  • 4 eggs
  • Olive oil
  • Salt to taste

Preparation

  • Preheat the oven to 170°C (340°F).
  • Wash all the vegetables thoroughly. Peel the zucchini and carrots, and chop all the vegetables into small pieces.
  • Heat some olive oil in a skillet over medium heat.
  • Add the onion and zucchini and sauté until slightly softened.
  • In a separate pot, boil the carrots and potatoes until tender. Then add them to the skillet along with the tomatoes and spinach, stirring everything together.
  • In a large bowl, beat the eggs with a pinch of salt.
  • Add the sautéed vegetables to the eggs and mix well.
  • Pour the mixture into a greased loaf-shaped baking dish.
  • Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
