Ingredients
- Potato
- Zucchini
- 200g spinach
- 2 tomatoes
- 2 carrots
- 1 onion
- 4 eggs
- Olive oil
- Salt to taste
Preparation
- Preheat the oven to 170°C (340°F).
- Wash all the vegetables thoroughly. Peel the zucchini and carrots, and chop all the vegetables into small pieces.
- Heat some olive oil in a skillet over medium heat.
- Add the onion and zucchini and sauté until slightly softened.
- In a separate pot, boil the carrots and potatoes until tender. Then add them to the skillet along with the tomatoes and spinach, stirring everything together.
- In a large bowl, beat the eggs with a pinch of salt.
- Add the sautéed vegetables to the eggs and mix well.
- Pour the mixture into a greased loaf-shaped baking dish.
- Bake for about 30 minutes, or until a toothpick inserted into the center comes out clean.
