Ingredients
- 6–7 boiled yams, cut into cubes
- 2 medium onions, sliced into rings
- 6 garlic cloves, finely chopped
- ¾ cup cooking oil
- ¾ cup olives
- 6 bay leaves
- ½ tsp cumin
- ¾ of a bell pepper, sliced into strips
- ½ cup vinegar
- Salt to taste
- Pepper to taste
Preparation
- Over medium-high heat, cook the vinegar, onions, oil, garlic, olives, bay leaves, cumin, pepper, and salt.
- In a separate large pot over medium-high heat, place the boiled yams and pour the prepared mixture over them.
- Stir gently until the liquid reduces slightly.Remove from heat and let cool to room temperature.
- Cover and refrigerate overnight.
- (Optional) Consume the next day for best flavor.
