Yam ice cream is a refreshing and healthy option, made with boiled yam, flaxseed gel, coconut oil, olive oil, and a touch of honey.


Ingredients
- 500 g boiled yam
- ½ cup flaxseed gel
- 5 tsp coconut oil
- 5 tsp olive oil
- Honey to taste (optional if you're vegan)
Preparation
- Add the flaxseed gel to a blender and blend until it turns into a white foam.
- Add the coconut oil and olive oil and continue blending for one more minute.
- Cut the boiled yam into pieces and place them in a food processor. Start mixing and gradually pour in the oil and flaxseed mixture in a thin stream.
- Use a rubber spatula to scrape down the sides of the container and ensure the mixture is uniform.
- Now, slowly drizzle in the honey while continuing to blend.
- Pour the mixture into a container and place it in the freezer.
- Before serving, transfer the ice cream to the refrigerator at least 7 hours in advance to soften.
