Zucchini Tortillas Recipe

Prepare delicious zucchini fritters, crispy on the outside and soft on the inside, perfect to accompany your breakfast with your favorite protein.

Ingredients

     
  • 1 zucchini
  • 1 cup of potato flour
  • 2 tablespoons of wate
  • 1 egg
  • Salt to taste
  • Vegetable oil

Preparation

  • Chop the zucchini into small cubes or grate it using the coarse side of the grater, and set it aside.
  • Mix the egg, flour, water, and salt until it reaches a thick consistency, then incorporate the zucchini into the mixture.
  • Heat oil in a pan and, using a spoon, place the mixture into the pan, forming small fritters.
  • Cook on both sides until golden and crispy.
  • Note: You can use a different flour than potato flour if preferred.
  • Note: We recommend pairing the breakfast with your preferred protein (chicken, turkey, fish, etc.) if you're not vegetarian.
