Carrot Soufflé Recipe

Ingredients

     
  • 1 onion
  • 2 sweet peppers
  • 1/2 bell pepper
  • 4 tablespoons coconut oil
  • Turmeric to taste
  • Pepper to taste
  • 4 garlic cloves
  • 4 tablespoons plantain flour
  • 1 tablespoon cassava flour
  • 4 eggs
  • 2 carrots
  • A pinch of nutmeg
  • Salt to taste

Preparation

  • Preheat the oven to 200°C (390°F).
  • Chop the onion, sweet peppers, and bell pepper into small cubes.
  • In a skillet, pour the coconut oil, add the turmeric, pepper, and crushed garlic cloves.
  • Add the chopped onion, sweet peppers, and bell pepper, and sauté.
  • Add the plantain flour and cassava flour, then transfer the mixture to a bowl.
  • Add two whole eggs, and only the yolks of the other two eggs, along with the grated carrots and mix well.
  • Beat the remaining egg whites until stiff peaks form and gently fold them into the mixture, combining everything well.
  • Season with a bit more pepper, nutmeg, and salt.
  • Pour the mixture into a muffin tin and bake in the oven.
