Chicken Jardinière (or Chicken with Garden Vegetables) Recipe

Prepare a delicious golden chicken with tender, juicy vegetables in an exquisite sauce.

Ingredients

     
  • Chopped whole chicken
  • 2 onions
  • 1 small carrot
  • 1 red bell pepper
  • 1 sweet chili pepper
  • Bay leaves
  • Garlic to taste
  • Salt to taste
  • 1 small can of green peas
  • 1 cup of water
  • Coconut oil

Preparation

  • Wash the chicken thoroughly and remove all the skin.
  • Let it dry while you chop the vegetables: slice the onions thinly, dice the carrot and sweet chili pepper, and cut the bell pepper into thin strips.
  • In a pot greased with a bit of coconut oil, heat over medium heat and add the chicken. Brown it thoroughly.
  • Once browned, add the chopped vegetables, water, season to taste, and cover.
  • After 15 minutes of cooking, add the green peas and let them simmer.
  • Check the salt before serving.
