Prepare a tasty plantain dough for hallacas using green plantains, ripe plantain (pintón), vinegar, salt, lemon, olive oil, and annatto (onoto).


Ingredients
- 10 green plantains
- 1 semi-ripe (pintón) plantain
- Vinegar
- Salt to taste
- Lemon to taste
- Olive oil to taste
- Annatto (onoto) to taste
Preparation
- Soak the plantains for 30 minutes in water with vinegar, salt, and lemon.
- Boil the plantains until tender, then mash them with a fork.
- Add annatto-infused oil and salt to taste, and knead the dough.
- To assemble the hallaca, moisten your hands, flatten the dough over a banana leaf, fill it with your desired stew, and fold to close.
