Prepare a delicious dish of sweet potatoes with eggs, soft and creamy, seasoned with oil, spices, and a touch of fresh parsley.


Ingredients
- 2 medium sweet potatoes
- 2 eggs
- 1 tbsp olive oil
- 2 tbsp coconut milk
- Garlic
- Salt to taste
- Pepper to taste
- Chopped parsley to taste
Preparation
- Boil the sweet potatoes until they can be mashed, then add oil and season.
- In a separate pan, cook the eggs for a few minutes, leaving the yolk soft, or cook longer if you prefer the yolk to be firm.
- Place the mashed sweet potatoes at the bottom of the plate and top with whole eggs if the yolk is soft, or chopped eggs if the yolk is firm.
- Season with salt and pepper to taste, and sprinkle a little chopped parsley on top.
